There are a lot of ingredients in this egg salad but it is so worth it!
1/3 cup mayo
1 tablespoon chopped pickles
1/2 teaspoon prepared mustard
1/8 teaspoon pepper
1/8 teaspoon celery salt
1/8 teaspoon paprika
1/8 teaspoon dried basil
1/8 teaspoon salt
1/4 cup shredded cheddar cheese
1/2 small onion, finely chopped
1/2 large carrot, grated
2 bacon strips, cooked and crumbled
Bring eggs to a boiling. Reduce heat; cover and simmer for 15-20 minutes. Remove from heat and run under cold water. Peel and chop hard-boiled eggs.
In a bowl, combine mayo, pickle, mustard, and seasonings. Stir in eggs, cheese, onion, carrot, and bacon.
Serve in pitas, if desired.
