GF White Bread

COMMENTS:
My daughter found a recipe for GF bread at Cooking Classy that works so well! It is delicious, fluffy, and perfect for sandwiches!

INGREDIENTS:
2 1/2 teaspoons yeast
3 1/2 Tablespoons sugar, divided
1/4 cup warm water, 110 degrees
1 1/4 cups milk, 110 degrees
2 Tablespoons canola oil
2 Tablespoons butter, softened
3 large eggs
1 Tablespoon lemon juice
2 cups white rice flour
1/2 cup tapioca flour
1/2 cup potato starch
1/3 cup cornstarch
1 Tablespoon xanthan gum
1 3/4 teaspoon salt
1 teaspoon baking powder

DIRECTIONS:
Combine yeast, 1/2 teaspoon sugar, and warm water in bowl of electric mixer. Whisk to dissolve yeast, then let rest 5-10 minutes.
Add remaining sugar (1 Tablespoon plus 1 teaspoon), milk, oil, butter, eggs and lemon juice. Whip on low speed, using paddle attachment, to combine.
Add all remaining ingredients and mix on low to combine. Then increase to medium speed for five minutes.
Pour bread dough into buttered 9x5" dish and spread to both ends. (It's consistency will be similar to a quick bread.)
Smooth the top with wet hands, while slightly doming loaf.
Let rise in a warm place for one hour to an hour and 15 minutes.
Bake bread in preheated 375 degree oven for 20 minutes.
Reduce oven temperature to 350 degrees and tent loaf with foil. Bake an additional 20 minutes.

However, my daughter tried this on time bake - without the foil and without the temperature change and it was just as successful.

Biscuits

COMMENTS:
My daughter has experimented with different biscuit recipes to find a good GF biscuit that we all enjoy. I am turning the blog over to her to share what she has done:

INGREDIENTS:
2 cups flour
1 teaspoon sugar
1 tablespoon baking powder
1 teaspoon salt
8 tablespoons butter, cubed
3/4 cup milk

DIRECTIONS:
Preheat oven to 425* F.
Mix flour, sugar, salt, baking powder, and salt.
Cut butter into flour mixture.
Make a well and add the milk.
Mix with fingers and milk when necessary.
Roll out dough on a lightly floured surface.
Cut biscuits with a biscuit cutter. (We use a glass cup)
Bake for 12 minutes or until golden brown. (Our biscuits normally don't brown. I did try it once, but they were dry and crumbly. This was with GF flour.)

Zucchini Chocolate Chip Bread (or Muffins)

COMMENTS:
With so much zucchini from a friend's garden we are finding all sorts of great recipes to use it up! This one was adapted (barely) from allrecipes.

INGREDIENTS:
1 1/2 cups (GF) flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1/2 cup oil (we used a little less)
1/4 cup milk
1 Tablespoon lemon juice
1 teaspoon vanilla
1 cup shredded zucchini
1 cup mini chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees. Grease loaf pan/Line muffin pan with paper liners.

Combine flour, sugar, soda, cinnamon, and salt in small bowl.

In separate bowl, blend egg, oil, milk, lemon juice, and vanilla.

Stir moist ingredients into dry ingredients.

Now fold in zucchini and chocolate chips.

Bake muffins for 20-25 minutes or loaf for 45-60 minutes.

GF Summer Squash Bread

COMMENTS:
I had some huge summer squash from a friend and decided to try "zucchini bread" with it. I slightly adapted a recipe I found at allrecipes. It was wonderful!

INGREDIENTS:
2 cups diced zucchini or summer squash
4 eggs
1 cup oil
2 teaspoons vanilla
2 cups sugar
2 cups white rice flour
1 cup cornstarch
1/4 cup tapioca starch
2 teaspoons baking powder
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1 teaspoon xanthan gum or guar gum
1 teaspoon salt

DIRECTIONS:
Preheat oven to 325 degrees. Grease two loaf pans.
Combine squash, eggs, oil, and vanilla in blender and blend until it is milkshake consistency.
In a bowl whisk together remaining ingredients.
Add squash mixture to dry ingredients and stir until well blended.
Pour into loaf pans and bake for one hour. Allow to cool for 5-10 minutes before removing from pan to cooling rack.

GF Sandwich Bread

COMMENTS:
This is our all-time favorite GF bread.

INGREDIENTS:

1 Tbsp. bread machine yeast
1 Tbsp. sugar
1 ½ c. water (105 degrees or a little less than hot)
2 ½ cups of GF flour mix (I use Bob's Red Mill)
2 tsp. xanthan gum
1 tsp. salt
3 eggs (or 9 Tbsp. water and 3 Tbsp. ground flax seed)
1 ½ Tbsp. oil
1 tsp. cider vinegar

DIRECTIONS:

Combine the yeast and sugar in a small bowl. Add the water while gently stirring the yeast and sugar; let sit while you mix the other ingredients.

In a separate bowl combine flour, xanthan gum, and salt in large mixing bowl; mix well.

In a third bowl, whisk the eggs, oil and vinegar until the eggs are a bit frothy.

Pour the two liquid mixtures into the flour mixture. Blend the dough with a mixer for 4 minutes.


Scoop the dough into a greased loaf pan. Allow the dough to rise in a warm area until is is about 1 inch from the top of the pan.

Bake at 375 degrees for 50 – 60 minutes.

Chocolate Chip Zucchini Bread

COMMENTS:
Zucchini bread is good but add chocolate and it is delicious! Plus this recipe was made to be GF, although I am sure it could be made with regular flour without a problem - just leave out the xanthan gum. Thanks to usasillyyaks.blogspot.com for this recipe!

INGREDIENTS:
3 cups GF Flour Mix
3/4 teaspoon xanthan gum
1 teaspoon salt
1 teaspoon pie spice
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup cinnamon applesauce
4 eggs beaten
1/2 cup milk
2 cups grated zucchini
2 teaspoon lemon juice
1 teaspoon almond extract
3/4 cup chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F. In a large bowl, combine flour, xanthan gum, salt, pie spice, baking soda, cinnamon and sugar. Mix wet ingredients into dry. Add the grated zucchini and stir until combined. Bake in 2 standard loaf pans, sprayed with cooking spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.

Blueberry Banana Bread

COMMENTS:
I found this recipe at tasteofhome.com. Again, it adapted well to GF flour.

INGREDIENTS:
1/2 cup shortening
3/4 cup sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas mashed
1 cup fresh blueberries

DIRECTIONS:
In a large bowl, cream the shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add creamed mixture, beating just until combined. Stir in bananas. Fold in blueberries.
Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 3 mini loaves.

Banana-Chocolate Bread

COMMENTS:
The bittersweet chocolate in this bread just makes it AMAZING! This would be classified as a dessert bread. YUM! And it adapted well for GF flour. (I found this recipe on the plantoeat site.)

INGREDIENTS:
1/2 cup butter (1 stick) room temperature
1 2/3 cup all purpose flour
1 tsp baking soda
1/2 tsp fine salt
3/4 cup sugar
2 large eggs
1 1/2 cups bananas (3-4)
2 Tbs plain or vanilla yogurt
1 tsp vanilla extract
5 oz bittersweet chocolate chopped

DIRECTIONS:
Preheat oven to 350 degrees; grease a loaf pan with butter and set aside.
In a medium bowl, whisk together the dry ingredients (flour through salt).
Using a stand mixer, beat the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition and scraping down the bowl as needed. Beat in bananas, yogurt, and vanilla. Beat in the flour mixture until just combined and stir in the chocolate. Pour batter into pan. Bake until a toothpick comes out clean from the center, about 60 minutes.
Let cool in the pan for 10 minutes, then remove and allow to finish cooling on a rack.

Banana Banana Bread

COMMENTS:
I found this recipe at amandeleine.com and it adapted well to using gluten free flour. Delicious!


INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup butter
3/4 cup brown sugar
2 eggs beaten
6 mashed medium overripe bananas

DIRECTIONS:
Preheat oven to 350 degrees F. Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine flour, cinnamon, baking soda and salt. In a separate bowl, use an electric mixer to cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten, do not over-mix. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Zucchini Bread

COMMENTS:
This disappears quickly! Add 3/4 cup chocolate chips to the batter to create an even more delicious treat!

INGREDIENTS:
3 cups GF Flour Mix
3/4 teaspoon xanthan gum
1 teaspoon salt
1 teaspoon pie spice
2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup cinnamon applesauce

1/2 cup milk

Pumpkin Bread

COMMENTS:
This was delicious! It's a good thing it makes two loaves because the first loaf disappeared  before it was cooled!

INGREDIENTS:
3 cups flour (I used Bob's Red Mill all-purpose GF flour)
2 cups sugar
2 teaspoons baking soda
4 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/2 teaspoon ginger
1 teaspoon salt
1/2 teaspoon baking powder
1 can pumpkin
1/2 cup oil
3 eggs
cinnamon-sugar mixture


DIRECTIONS:
Grease two loaf pans with butter and sprinkle with cinnamon sugar mixture; set aside and preheat oven to 350*.
In large bowl mix together dry ingredients.
In mixing bowl, blend oil, pumpkin, and eggs; mix well.
Add dry ingredients and mix well again.
Pour batter evenly into pans and bake 50-60 minutes.
You should cool these loaves before removing from pan.... (the smell was too tempting and we just began eating!)

Cranberry Banana Oat Loaves

COMMENTS:
In looking for something different for my over-ripened bananas, I found this recipe at allrecipes.com that I adapted slightly based on some of the comments. I made eight mini-loaves. This is very yummy warmed up with butter! Mmmmm!

INGREDIENTS:
1 1/4 cup (GF) all-purpose flour
1 cup oats
1 Tablespoon baking powder
1/2 teaspoon salt
2 large eggs
2 ripened bananas
2 Tablespoons sour cream
1/3 cup applesauce
1/2 cup white sugar
3/4 cup Craisins
1/2 teaspoon lemon juice

DIRECTIONS:
Preheat oven to 350 degrees. Grease loaf pan/muffin pan/mini-loaves pan.
Mix together flour, oats, baking powder, and salt; set aside.
In mixing bowl, beat eggs until smooth. Add bananas, sour cream, and applesauce. Now add sugar, cranberries, and lemon juice until evenly blended.
Fold oat mixture into mixing bowl and pour into prepared pan(s).
Bake mini loaves for 30 minutes or until a toothpick inserted into the center comes out clean.
Cool for a bit on cooling rack before removing from pan.

Zucchini Bread

COMMENTS:
Extra zucchini from the neighbor so I made some bread! This made two loaves so I gave right back to my neighbor!

INGREDIENTS:
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons cinnamon
3 eggs
1 cup oil
2 1/4 cups sugar
1 Tablespoon vanilla
2 cups grated zucchini

DIRECTIONS:
Grease and flour two loaf pans. Preheat oven to 325 degrees.
Sift flour, salt, baking powder, soda, and cinnamon together in bowl.
Beat eggs, oil, vanilla, and sugar together in large mixing bowl.
Add sifted ingredients to the creamed mixture, beating well.
Stir in zucchini until well compbined; pour into prepared pans.
Bake for 45-60 minutes, or until toothpick inserted in the center comes out clean.
Cool in pan for 20 minutes before removing to cool completely.

Light Oat Bread

COMMENTS:
This bread is great for sandwiches!

INGREDIENTS:
1 1/4 cups water
2 tablespoons margarine
1/2 cup oats
2 tablespoons brown sugar
1 teaspoon salt
3 cups flour
1 1/2 teaspoons yeast

DIRECTIONS:
Place ingredients in bread machine pan using regular light bread setting.

Wheat Bread

COMMENTS:
This recipe from CHILD magazine was delicious! It was also very simple even without the bread maker. It does make two loaves so I am going to have to adapt it before trying it in the bread maker...

INGREDIENTS:
1 packet yeast
2 cups warm water
3 cups white flour
2 cups whole wheat flour
1 teaspoon salt
5 tablespoons canola oil
2 tablespoons honey (or sugar)

DIRECTIONS:
In a small bowl, whisk yeast into warm water; set aside. In a large bowl, mix flours and salt. In another small bowl, combine oil and honey.

Add yeast mixture and oil mixture to flour. Stir until mixture becomes thick and doughlike.

Turn dough onto a floured surface and knead for 5 minutes, until smooth and elastic. Place in an oiled bowl, turn once, cover and place in a warm spot for about an hour, until dough doubles in size.

Turn risen dough onto a floured surface and punch to deflate. Divide dough in half and form into loaf shapes.

Place dough in two greased 8" loaf pans and allow to rise for 45 minutes. Preheat oven for 400 degrees. Bake for 25 to 35 minutes. until golden brown and hollow-sounding when tapped. Remove from pans and cool on baking racks.

Buttery Rolls

COMMENTS:
These are very yummy rolls made easy by the bread maker preparing the dough.

INGREDIENTS:
1 cup warm milk
1/2 cup butter or margarine, softened
1/4 cup sugar
2 eggs, beaten
1 1/2 teaspoons salt
4 cups bread flour
2 1/4 teaspoons yeast

DIRECTIONS:
In bread machine pan, place all ingredients in order. Select dough setting.

When cycle is complete, turn dough onto a lightly floured surface. Divide into 24 portions; shape into balls. Place in a greased 13" x 9" pan and let rise for 15 minutes. Bake for 375 degrees for 15 minutes or until golden brown.

Cheddar Cheese Bread

COMMENTS:
This bread is especially good with chili!

INGREDIENTS:
1 1/4 cups warm water
1 tablespoon butter, softened
1 1/2 cups shredded Cheddar cheese (mild or sharp)
2 tablespoons sugar
1 teaspoon salt
1/4 cup dry milk powder
3 cups bread flour
2 1/4 teaspoon yeast

DIRECTIONS:
Place ingredients in bread machine pan. Select White Bread, light crust setting; start.

Garlic Bread - 2 pound loaf

COMMENTS:
I found a recipe on allrecipes.com with some comments. I kind of combined a few of them and we ended up with fabulous bread. For those of you who have eaten at Biaggi's - this is it! It is great by itself but also dipped in olive oil and Parmesan Cheese like they do at the restaurant!

INGREDIENTS:
1 1/3 cup warm water
1 Tablespoon + 1 teaspoon olive oil
1 Tablespoon + 1 teaspoon dry milk powder
1 tablespoon + 1 teaspoon sugar
2 teaspoons salt
2 1/2 teaspoons oregano
1 Tablespoon minced garlic
4 cups bread flour
2 3/4 teaspoons yeast

DIRECTIONS:
Place ingredients in bread machine pan in above order. Set for 2 pound loaf of regular bread and enjoy!

Garlic Bread - 1.5 pound loaf

COMMENTS:

Three Cheese Bread

COMMENTS:
This bread is so good! It stays moist and slices well even several days later.

INGREDIENTS:
3/4 cup + 2 tablespoons water, 80-90 degrees
1/2 cup part-skim ricotta cheese
1 cup shredded Cheddar cheese
1/2 cup grated Parmesan, Asiago cheese mixture
2 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon hot sauce
4 1/4 cups bread flour
2 teaspoons yeast

DIRECTIONS:
Place ingredients, in the order listed, in the bread pan.
Select Large, White, and Medium Crust.
