Apple Pancakes

COMMENTS:
These are super yummy in the fall - especially when they are hot off the griddle! If you allow the batter to sit for 30-60 minutes before adding the apples the cinnamon flavor is much more pronounced! (But that's not necessary for a delicious meal.)

INGREDIENTS:
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
2 cups sour cream (or plain yogurt)
1/4 cup apple cider (or juice)
1/4 cup sugar
1/4 cup margarine, melted
2 eggs
2 medium apples, peeled and finely chopped

DIRECTIONS:
Stir together flour, baking powder, baking soda, and cinnamon in a large mixing bowl. Add sour cream, apple cider, sugar, butter, and eggs. Beat until smooth. The batter will be very thick.
Stir apples into batter.
Heat a heavy skillet and grease with oil. Drop batter onto hot griddle, about 1/4 cup at a time.
When bubbles appear on top after approximately 2 minutes, turn and brown other side.
