Baked "Fried" Chicken

COMMENTS:
This is a healthy alternative to fried chicken and it is even a hit with the kids!

INGREDIENTS:
1/2 cup plain dried bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons cornmeal
1/4 teaspoon ground red pepper
1 egg white
1/2 teaspoon salt
2 pounds chicken tenders

DIRECTIONS:
Preheat oven to 425 degrees. Spray 15x10" pan with cooking spray.
In pie plate, mix bread crumbs, cheese, cornmeal, and red pepper.
In another pie plate, beat egg white and salt.
Dip each piece of chicken in egg-white mixture, then coat with breadcrumb mixture. Place chicken in pan; spray lightly with cooking spray.
Bake chicken 35 minutes or until coating is crisp and juices run clear when chicken is pierced with tip of knife.
