Theses are really supposed to be appetizers, I'm sure but they were a lot of fun and the kids enjoyed them.
INGREDIENTS:
10 tortillas, quartered
1 large egg
1 cup grated cheddar cheese
3/4 cup cream cheese, softened
1/2 cup frozen corn kernels
1/4 cup salsa
1/4 teaspoon pepper
DIRECTIONS:
Press tortilla quarters into lightly greased mini-muffin cups, letting the points stick up. Bake for 5 minutes in preheated 425 degree oven, or until lightly browned. Allow to cool slightly.
In a medium bowl, lightly beat the egg. Add to the egg the cheddar cheese, cream cheese, corn, salsa, and pepper.
Spoon mixture into each tortilla cup. Bake for 5-7 minutes, or until the filling is set.
Top with additional salsa, if desired.
