This was so good! This is a Pampered Chef recipe using the Stoneware Bar Pan. It would be great in addition to other breakfast foods for a guest brunch.
56 saltine crackers, divided
1 1/2 cups shredded cheddar cheese, divided
1 cup sour cream
1 cup sour cream
2 eggs
1/8 teaspoon pepper
1 1/2 cups coarsely chopped cooked deli ham
1/2 cup diced bell pepper
DIRECTIONS:
Preheat oven to 400 degrees.
Arrange 40 of the crackers over bottom of pan (8 rows of 5). Crush remaining crackers and combine with one cup of the shredded cheese. Sprinkle cracker-cheese mixture evenly over cracker crust.
In a bowl, combine sour cream, eggs, and pepper. Mix until smooth. Stir ham and bell pepper into mixture and spread evenly over cheese mixture.
Bake for 22-25 minutes or until golden brown and set. Sprinkle remaining cheese and cut into squares for serving.
