Squash Casserole

COMMENTS:
I really enjoyed this and I think it would be perfect for a potluck! (I adapted this from a recipe from the Mitford series books!)

INGREDIENTS:
1 1/2 tablespoons unsalted butter
4 medium yellow squash or zucchini, chopped
1/2 medium onion, chopped
1 large egg, beaten
2 teaspoons parsley
1/2 cup grated cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup crushed potato chips

DIRECTIONS:
Preheat the oven to 350 degrees. Lightly grease a 1.5 quart baking dish and set aside.
Place the squash and onions in a large pot with a small amount of water over medium heat. Bring to simmer and cook until tender, 8-10 minutes. Drain into a colander and then mash in a large bowl. Add butter and stir until melted.
In a separate bowl, combine the eggs, parsley, cheese, salt, and pepper; add to the vegetable mixture.
Pour into the baking dish and bake for 20 minutes. Top with potato chips and bake an additional 10 minutes, or until the potato chips are browned.
