COMMENTS:
This was pretty simple and everyone loved it! I only marinated the chicken for 30 minutes but can imagine how much tastier it would have been had I planned a little farther ahead!
INGREDIENTS:
1/3 cup rice vinegar
3 tablespoons honey
2 tablespoons peanut butter
2 tablespoons soy sauce
2 cloves garlic, finely chopped
2 tablespoons vegetable oil
1 tablespoon sesame oil
1/4 teaspoon red pepper
1/4 teaspoon ginger
3 cups boneless, skinless chicken breasts, cut into cubes
9 ounces Asian style noodles (linguine)
1 1/2 cups snow peas
DIRECTIONS:
In a medium bowl combine rice vinegar, honey, peanut butter, soy sauce, garlic, vegetable oil, sesame oil, red pepper, and ginger for marinade. Set aside 1/4 of the marinade and marinate the chicken in the rest (for at least 30 minutes).
Remove chicken from marinade and cook chicken in large saute pan or wok for 6-10 minutes, or until chicken is cooked thoroughly. Throw out remaining marinade and turn off burner.
Meanwhile, cook noodles according to package directions. Add snow peas for the last 3 minutes of cooking noodles. Rinse noodles and peas with cold water; drain. Toss with chicken and marinade which was set aside; serve.
