This was something completely new and different for our household but we loved them!
2 teaspoons mayonnaise
3 oz. thinly sliced ham (lunchmeat)
1 can (8oz) crushed pineapple, well drained
1/2 cup chopped green pepper
1/4 cup mozzarella cheese, shredded
In a nonstick skillet, place tortilla. Spread with 1 teaspoon mayo, top with half of the ham, pineapple, pepper, and cheese. Top with second tortilla.
Cook over medium heat 2-4 minutes, turning once, until lightly browned. Remove from skillet.
Repeat to make second quesadilla.
