I made these to finish up our homeschool unit on France. They were delicious! I only have a large fry pan so the flipping was kind of hard; I definitely recommend using a small to medium size fry pan if you have one. But with the large size, the batter still made four crepes - we filled ours with cherry pie filling.
1/2 cup flour
1/2 cup milk
1/4 cup water
2 Tablespoons melted butter
1 1/2 Tablespoons sugar
pinch of salt
Mix together all ingredients. Let batter sit for one hour.
Coat fry pan with a little butter. Pour a small amount of batter into the hot pan, lift the pan and swirl slightly to coat all of the bottom with batter. Cook one side, flip, and cook the other side.
