I was getting ready to make pancakes when my parents were visiting and realized we were almost out of pancake mix! Oops! So allrecipes.com to the rescue! What was fun was that everyone got to have the store bought mix pancakes AND the homemade version at breakfast that morning. Everyone said the homemade version was much tastier! Note: If you want to double this recipe, still only use one egg. (This recipe makes approximately 9 average-size pancakes.)
A few other things I learned when searching for how to make pancakes from scratch: Resting the batter in the refrigerator for 15-20 minutes will cause the pancakes to be fluffier. Make the batter ahead of time and be ready to make pancakes anytime! Also, stirring the batter between batches pops the air bubbles that are forming, causing deflated pancakes.
INGREDIENTS:
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1 egg
2 tablespoons oil
1/2 teaspoon vanilla
DIRECTIONS:
Preheat griddle over medium-high heat. Spray with non-stick spray.
Combine dry ingredients.
In a separate bowl, beat together egg, milk, oil, and vanilla.
Pour milk mixture into dry mixture; beating until smooth.
Scoop batter onto hot griddle. Brown on both sides.
