In search of some yummy gluten free desserts I came across a recipe on thenatos.blogspot.com. Instead of flour, garbonzo beans are used. I adapted it slightly... Sounds gross but they were very yummy!
INGREDIENTS:
2 cans garbonzo beans
4 teaspoons vanilla
1/2 cup almond butter
2 eggs
1/2 cup oats
2 Tablespoons flaxseed
2 teaspoons baking soda
1/4 teaspoon baking powder
1 teaspoon salt
2 cups brown sugar
1 cup butterscotch chips
DIRECTIONS:
Preheat oven to 350 degrees.
Drain, rinse, and blend the garbonzo beans enough to break them up. Add vanilla and almond butter. Then add eggs and flaxseed; mix. Add brown sugar, salt, soda, and baking powder and mix but don't overmix. (If you can, continue to use your blender; my blender preferred that I mix by hand.) Now mix in butterscotch chips.
Bake for 40 to 45 minutes in large bar pan. Let cool for 20 minutes and enjoy!
