Zucchini Canoes

We ate this as our main course but it would make a great side to go with pork chops.

2 medium-sized zucchinis, halved lengthwise
1/2 teaspoon vegetable oil
3 slices deli ham, chopped into bite-sized pieces
1/2 cup stuffing mix
1/4 cup small pineapple chunks
1/4 cup marinara sauce
1/2 cup grated mozzarella cheese

Preheat the oven to 375 degrees. Scrape the seeds out of the zucchinis with the spoon, to make a "canoe" out of the zucchini.

Rub a little bit of the vegetable oil on the outsides of the zucchinis, and place them skin side down on the baking sheet.

Combine ham, stuffing, pineapple, and marinara sauce and spoon into the zucchinis. Sprinkle the cheese on top of the filling and bake for 20 to 25 minutes.
