Lasagna Logs

COMMENTS:
My daughter found this recipe in a kids' cookbook. It was delicious, as well as pretty! I think it may take over our previous lasagna recipe! This is also a great make-ahead meal!

INGREDIENTS:
8 uncooked lasagna noodles
1 egg
1 12-oz. container low-fat cottage cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil leaves
2 cups tomato pasta sauce (from jar)

DIRECTIONS:
Cook lasagna noodles according to package directions.

Meanwhile, mix together egg, cottage cheese, mozzarella chese, Parmesan cheese, and basil.

Lay out the cooked noodles and spread cheese mixture evenly over each noodle, leaving some space at one end. Roll up the noodles tightly toward the unfilled side.

Place logs on a jelly roll pan and bake for 15-20 minutes at 350 degrees.
OR
Wrap each of the lasagna logs with plastic wrap and refrigerate or freeze for later use. Bake as above or microwave for 1-2 minutes after unwrapping from the refrigerator. Then pour tomato pasta sauce on top and heat for an additional 20-30 seconds.
