INGREDIENTS:
4 large potatoes
1 tablespoon olive oil
2 tablespoons butter
1 teaspoon minced garlic
1/2 cup sour cream
1/4 to 1/2 cup milk
1 cup shredded cheddar cheese
DIRECTIONS:
Peel the potatoes and cut into small chunks. Place in a pot and cover with cold water. Cover the pot and bring to a boil over high heat. Uncover, add salt to season, and cook until tender, about 15 minutes.
In a small skillet, over medium heat, add oil and butter. When butter melts, add the garlic and saute for a couple minutes. Remove the pan from the heat.
When the potatoes are tender, drain and then return to the hot pot. Add the garlic-butter mixture and the sour cream and begin mashing. Add milk as needed to reach desired consistency. Season with salt and pepper and serve with cheddar cheese on top.
