Apple Puff Pancake

COMMENTS:
This is an easier, yummier, and prettier (healthier too!) apple pancake than my previous apple pancake recipe. It really puffs up - it's gorgeous! The pictures show the recipe made in a 9x13 and also in individual serving dishes. (Halving the recipe makes three individual puff pancakes.)

INGREDIENTS:
6 eggs
1 1/2 cups milk
1 teaspoon vanilla extract
1 cup flour
3 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 tablespoons butter
3 apples, peeled, cored, sliced
3 tablespoons brown sugar

DIRECTIONS:
Preheat the oven to 425 degrees.
In a large mixing bowl, blend eggs, milk and vanilla. Add flour, sugar, salt, and cinnamon. Mix just until blended.
Melt butter in a 9x9 inch square pan. Arrange apple slices in the bottom of the pan and pour the batter over them. Sprinkle top with brown sugar.
Bake for 30 minutes or until puffed and lightly browned.
