Yum! That's all I can say! (You know those cookie cakes at the mall? Yeah, this is it!) We had it without any topping but it would be prettier with frosting or whipped cream. Yum!
INGREDIENTS:
1 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, at room temperature
1 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
DIRECTIONS:
Preheat the oven to 350 degrees.
Grease and flour an 8-inch round cake pan.
In a small bowl, stir together flour, baking powder, and salt.
In a mixing bowl, beat butter and brown sugar until creamy. Add egg and vanilla and beat on medium speed until blended. Add flour mixture and mix on low just until blended. Stir in chocolate chips.
Scrape the dough into prepared pan, spreading evenly.
Bake for 30 minutes until toothpick inserted into center comes out clean. Allow to cool on cooling rack, in pan, for 30 minutes.
If desired, top with frosting or whipped cream.
