This recipe came from a kids cookbook and it is definitely a hit with the kids! Serve this with Homemade Honey Mustard Dip (recipe above).
about 1 pound of chicken tenders, or chicken breasts cut into strips
1 cup bite-size cheese crackers, crushed
1/4 cup dry bread crumbs
1/2 cup milk
1 teaspoon lemon juice
Preheat oven to 400 degrees.
Mix lemon juice and milk in pie plate; set aside.
Mix together crushed crackers and bread crumbs in a separate pie plate.
Dip chicken in milk and then roll in cracker mixture.
Bake for 15-20 minutes or until chicken is done and crumb mixture is golden brown.
