Veggie Tacos

I have a friend visiting who made dinner for us tonight. It was great on tortillas with a bit of shredded cheese! (I did not have the cumin but it was still great without it!)

1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
1 cup peeled diced cooked sweet potatoes
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 green pepper, chopped
1 cup frozen corn, thawed
1 cup canned black beans, drained, rinsed
1/4 cup cilantro or parsley

Heat oil in large nonstick skillet over medium-high heat until hot. Add onion; cook 2 to 3 minutes or until softened, stirring frequently. Add garlic; cook and stir 30 seconds or until fragrant. Stir in potatoes, cumin, salt and pepper. Cook 2 to 3 minutes or until lightly browned. Stir in bell pepper; cook 1 minute or until pepper begins to soften. Stir in corn, beans, and cilantro; cook 3 to 4 minutes or until heated through, stirring occasionally.
