Monterey Jack Zucchini Chicken

COMMENTS:
I love zucchini but am (usually) the only fan of it in this house. This was an exception to the rule! EVERYONE liked this and asked for "more of the zucchini part." I can't wait to make this again! Thank you, Hillbilly Housewife for so many wonderful recipes!

INGREDIENTS:
3 Tablespoons butter, divided
3 small zucchini, shredded (using large holes) and squeezed of excess liquid
1/4 cup green onion, chopped
1/4 cup flour
1 Tablespoon chili powder
1 teaspoon salt
4 boneless, skinless chicken breasts
4 slices Monterey Jack cheese

DIRECTIONS:
Preheat oven to 350 degrees.
Toss zucchini and onions in mixing bowl.
Use one Tablespoon butter to coat bottom and sides of casserole dish.
In pie plate combine flour, chili powder, and salt.
Melt remaining butter in skillet over medium heat. Coat chicken in flour mixture and add to melted butter. Brown chicken for four minutes on each side.
Once chicken is browned, place at the bottom of casserole dish. Spread zucchini mixture over the chicken. Lay the cheese slices on top.
Bake for 20 minutes or until the cheese is melted and chicken is done.
