I really need a meat tenderizer if I am going to continue to try to make rolled up meals! This dirties a lot of shallow pie plates but was worth it! My husband said this tasted like a "Schwan meal!" I'll take that as a compliment!
INGREDIENTS:
4 boneless skinless chicken breasts
4 slices Mozzarella cheese
1/2 cup flour
2/3 cups seasoned bread crumbs
2 eggs
1/2 cup melted butter
1/2 teaspoon oregano
DIRECTIONS:
Flatten the chicken to 1/3 inch thickness. Place one cheese slice on each piece of chicken, rolling up and securing with a toothpick.
Put flour in one pie plate, bread crumbs in another, and the eggs (slightly beaten) in a third.
Cover the chicken rolls with flour, dip into eggs, and roll in bread crumbs, covering completely.
Place the coated chicken rolls in an ungreased casserole dish.
Mix oregano into melted butter and pour over chicken.
Bake for 45 minutes at 350 degrees.
