Roasted Veggie, Black Bean, Cheese Wrap

I really am trying to eat healthier and here is a new recipe we tried tonight. One bad thing though: there wasn't enough! All four of us wanted seconds! This recipe came from the Mission Tortilla website. YUM!
INGREDIENTS:
4 whole wheat tortillas
1/3 cup salsa
6 oz. yams, peeled and sliced into skinny strips
1 green pepper, sliced into skinny strips (or 1/2 of different colored peppers - I'm just cheap)
1 medium onion, sliced into chunks
pinch of red pepper
salt and pepper to taste
1 Tablespoon olive oil
1/2 cup drained black beans
1/2 cup cooked instant brown rice
1/2 cup shredded cheese

DIRECTIONS:
Preheat oven to 425 degrees.
Place salsa in strainer and let drain; set aside.
In a medium bowl, toss yams, peppers, onions, red pepper, salt, pepper, and olive oil until well coated. Place on greased cookie sheet and roast for 15-20 minutes, stirring occasionally.
Assemble wraps: Spread each tortilla with 1/4 of the vegetable mixture, 1/4 of the black beans, 1/4 of the rice, and 1/4 of the cheese. Top with salsa and roll up.
Mission recommends wrapping with plastic wrap and refrigerating... I enjoyed them warm as well.
