Cashew Chicken

This was so good! It reminded me of the restaurant, Hu Hot. YUM! And the leftovers were excellent as well!

3 boneless, skinless chicken breasts, cut in bite sized pieces
1 package rice noodles
1/2 pound carrots, julienned
2 cups baby broccoli pieces
1 cup chopped cashews
1/2 - 3/4 cup Bragg's Liquid Aminos
5 Tablespoons coconut oil
1/2 teaspoon ground ginger

Cook rice noodles; set aside.
Cook chicken in coconut oil, until almost cooked all the way.
Add carrots and broccoli.
Once veggies are cooked to desired tenderness, add remaining ingredients.
