Chicken Salad Supreme

COMMENTS:
This is a great lunch recommended to me by my nutritionist since it includes protein, fat, and carbs - and is gluten free! It was very good too!


INGREDIENTS:
1 can (13 oz) chicken breast
3 hard boiled eggs, chopped
1 apple, chopped
1 stalk celery, chopped
1/3 cup safflower mayo
1 Tablespoon lemon juice
dash of salt
dash of onion salt

DIRECTIONS:
Mix together all ingredients and serve over spinach, Romaine lettuce, with rice crackers, or plain!
