Rotisserie Chicken w/o the Rotisserie!

This was delicious! The kids and my husband said, "It tastes just as good, if not better, than Sam's Club Rotisserie!" And it only takes a few minutes to prepare - just remember to do that preparation the night before! I apologize for the picture! We dug in to it in a hurry! :)

2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 onion, quartered (optional)
1 whole chicken, without giblets

Mix together all spices. Rub over outside of chicken.
Place onion inside cavity of the chicken.
Place chicken in plastic bag or covered in roasting pan in the refrigerator overnight for more flavor (not required).
Bake uncovered at 250 degrees for at least five hours, until internal temperature reaches 180 degrees F.
Let the chicken stand for 10 minutes before carving.
