This has been a week of "Freezer Cooking." Not only did I make several
meals for our family, I made some meals for some friends going through
busy times (births and deaths) this week. That required a lot of
shredded chicken. So in the process of boiling the chicken, I made
chicken stock. The chicken stock recipe I used suggested using a mixer with a flat beater to shred the chicken. BRILLIANT!
After boiling the chicken, allow it to cool and then place in mixer bowl with flat beater.
Turn on low... and woo hoo! Shredded chicken without the tedious-ness of two forks!
