COMMENTS:
This use to be called "Baked Chicken Peanut Kabobs" because I first made this in a 450 degree oven in the winter when grilling was not an option. They were delicious that way but there is just something extra about the grill flavor!
INGREDIENTS:
chicken breast halves, cut into 1-inch pieces
1 red onion, cut into chunks
1/2 cup teriyaki sauce
1 tablespoon oil
1/4 cup creamy peanut butter
1/4 teaspoon hot pepper sauce
DIRECTIONS:
Alternately thread chicken and red onions on skewers.
In small bowl, combine 2 tablespoons of the teriyaki sauce and oil; mix well. Brush on kabobs.
Grill/Bake until chicken is no longer pink, turning once and brushing with teriyaki and oil mixture. Discard any remaining mixture.
Now prepare the sauce. Combine remaining teriyaki sauce, peanut butter, and hot pepper sauce; mix well. (Allowing the peanut butter to soak in the teriyaki sauce while baking/grilling, will help it mix easier.) Brush sauce on kabobs (with clean brush) immediately before serving and use the rest for dipping.
