Shredding Chicken

This has been a week of  "Freezer Cooking." Not only did I make several meals for our family, I made some meals for some friends going through busy times (births and deaths) this week. That required a lot of shredded chicken. So in the process of boiling the chicken, I made chicken stock. The chicken stock recipe I used suggested using a mixer with a flat beater to shred the chicken. BRILLIANT!

 After boiling the chicken, allow it to cool and then place in mixer bowl with flat beater.

Turn on low... and woo hoo! Shredded chicken without the tedious-ness of two forks!

Taco Seasoning

COMMENTS:
I was out of taco seasoning and needed to make my own version. I found this recipe online somewhere and it worked well.

INGREDIENTS:
6 teaspoons chili powder
5 teaspoons paprika
4 1/2 teaspoons cumin
2 1/2 teaspoons onion powder
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper

DIRECTIONS:
Combine all ingredients and store in air-tight container. NOTE: 7 teaspoons of this mix is the same amount as one store bought package of taco seasoning.

Cheese & Pizza

  • Put sugar cubes in cheese containers to keep the cheese free of mold.
  • When cooking just one frozen pizza, save energy, and a hot kitchen, by cooking it in an electric frying pan instead of the oven.

Healthy Switches

  • Instead of using 1/2 cup of butter in frosting, use 1/2 cup marshmallow fluff (you'll save 574 calories and 92 g. fat!)
  • Instead of using 1/2 cup vegetable oil in baking, use 1/2 cup unsweetened applesauce (you'll save 910 callories and 109 g. fat)
  • Instead of using 2 tablespoons butter or oil when sauteeing, use 2-4 tablespoons wine

  • Roast chicken on top of clery stalks for a moisturizing and flavorful meat rack
  • Add a pinch of baking soda to mashed potatoes to make them lighter and airier.

Corn and French Fries

I have found a bunch of cooking hints and tips among my things. I am going to slowly consolidate them and get them on the blog:
  • When boiling corn, add sugar to the water - it makes the corn sweet. (Salt makes the corn tough.)
  • To make crisp French Fries, soak potatoes in cold water for 30 minutes ahead of time.
