PBJ Stuffed French Toast

COMMENTS:
I found this something similar to this in Woman's Day Magazine and tried it out on a Daddy-out-of-town-night. It was definitely a hit with the kids. I enjoyed it too with the ooey melted peanut butter! Plus, no syrup is needed!

INGREDIENTS:
bread slices
peanut butter
jelly
eggs
milk
powdered sugar

DIRECTIONS:
Spread peanut butter and jelly on one slice of bread, fold in half.
Now make just as you would regular French toast (dipping in egg/milk mixture and cooking on griddle). Sprinkle with powdered sugar. Enjoy!

Peach French Toast

COMMENTS:
I was looking for a recipe to use the excess peaches I had in my freezer. Even though this recipe originally called for canned, drained peaches, the frozen ones turned out just fine! This is similar to my Overnight French Toast but not quite as gooey/non-healthy.

INGREDIENTS:
1 cup brown sugar
1/2 cup butter or margarine
2 Tablespoons water
1 pound frozen peaches, rinsed and semi-thawed
Italian bread loaf, sliced thick - 1 inch
5 eggs
1 1/2 cups milk
1 Tablespoon vanilla
cinnamon

DIRECTIONS:
In a saucepan, bring brown sugar, butter, and water to a boil. Reduce heat and allow to simmer for ten minutes, stirring frequently.
Pour into greased 13x9 pan. Top with peaches and then with bread slices.
In a mixing bowl, beat eggs, milk, and vanilla. Slowly pour over bread. Cover and refrigerate eight hours or overnight.
Remove from the refrigerator thirty minutes before baking. Sprinkle with cinnamon.
Cover and bake at 350 degrees for 20 minutes. Uncover and continue baking for 25 minutes.

Banana Brown Sugar French Toast

COMMENTS: Here is another recipe from a friend - delicious!

INGREDIENTS:
8 pieces of bread
2 eggs
heavy whipping cream (about 1/2 cup)
1 teaspoon (or more) cinnamon
1 teaspoon (or more) vanilla
6 Tablespoons granulated sugar
1/3 cup brown sugar
4 Tablespoons butter
2 bananas, sliced
powdered sugar
canola oil (about 1 Tablespoon)

DIRECTIONS:
In a pie plate, beat eggs; add cream until color of egg and cream is a pale buttery yellow.
Add granulated sugar, vanilla, and cinnamon. Whisk to incorporate.
Heat large griddle over medium-low heat with canola oil.
Dip bread into egg-cream mixture, making sure each side is coated and saturated.
Place bread onto griddle. Flip after 2-3 minutes, cooking each side until golden brown.Reapeat with all pieces of bread.
While French Toast is cooking, in a small skillet, place butter, brown sugar and sliced bananas. Heat until simmering, golden and fragrant (about 3 minutes). Butter and brown sugar will create a glaze/syrup on bananas. Remove from heat.
Place banana mixture over French Toast slices and sprinkle with powdered sugar. Serve hot!

Almond French Toast

COMMENTS:
We love trying different French Toast recipes. This one is much healthier than our other favorites!

INGREDIENTS:
1 cup slivered almonds
3 eggs
1 cup milk
3 tablespoons flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon almond extract
1 teaspoon vanilla extract
French Bread, sliced thickly
3 tablespoons oil
3 tablespoons butter
confectioners' sugar for dusting

INGREDIENTS:
Place almonds in a small saucepan over low heat. Tossing frequently, toast until lightly browned, 5 to 10 minutes. Remove from heat, and set aside.

In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract and vanilla extract. Soak bread slices in the mixture until saturated. Place slices in a shallow pan. Refrigerate slices approximately 1 hour.

Heat oil and butter in a large skillet over medium heat. One at a time, press bread slices in the almonds to coat. Fry bread slices on both sides until golden brown. Dust with confectioners' sugar before serving.

Overnight French Toast

COMMENTS:
This is a favorite recipe at our house. It is a special treat for those times we find day-old French Bread half price at the store! (I labeled this as "Breakfast" but we use it for brunch or dinner.)

INGREDIENTS:
2 tablespoons corn syrup
1/2 cup butter
1 cup packed brown sugar
1 loaf French bread
5 eggs
1 1/2 cups milk
1 tablespoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon

DIRECTIONS:
Combine the corn syrup, butter, and brown sugar in a small saucepan and simmer until the sugar has melted. Pour this mixture over the bottom of a greased 9x13 inch casserole dish.

Slice the French Bread loaf into fat (1"-1.5") slices. Place the bread slices over the sugar-butter mixture in the dish. In a bowl, beat together the eggs, milk, vanilla, salt, and cinnamon mixture. Pour over the bread. Cover the dish and let it stand in the refrigerator overnight.

The next morning, preheat the oven to 350 degrees. Uncover the pan and bake for 45 minutes. Serve while hot or the French toast will harden in the pan. It can be reheated and the leftovers are yummy!
