Mediterranean Chicken Stir Fry

COMMENTS:
I found this recipe in the book Always Hungry? and adapted it only slightly.

INGREDIENTS:
olive oil
4 chicken breasts/thighs, cut in bite-size pieces
salt and pepper, to taste
chopped onion
1 T minced garlic
1 can diced tomatoes
1 can garbanzo beans, drained and rinsed
1/2 pound green beans (fresh or frozen)
feta cheese

DIRECTIONS:
Heat the oil in a skillet. Add chicken and salt and pepper, cooking for about 5 minutes.
Add the onion and garlic, sautéing about 5 more minutes.
Add the tomatoes and garbanzo beans, bringing to a boil. Then reduce heat and simmer for 10-15 minutes until chicken is fully cooked.
Finally add green beans and cover for five minutes.
Garnish with feta cheese.

Loaded Chicken Salad

COMMENTS:
I found this recipe on Pinterest and cut down on the mayo and sour cream. (I don't like my chicken salad runny.) Delicious! Here is my adaptation.

INGREDIENTS:
2 large cans of chicken
1/3 cup sour cream
2/3 cup mayo
6 pieces of bacon, cooked & crumbled
1 cup celery, diced
1/4 cup diced onion
1 cup cheddar cheese, shredded
salt & pepper, to taste

DIRECTIONS:
Blend together sour cream and mayonnaise. Then add chicken and remaining ingredients. Serve immediately or chilled.

Slow Cooker Teriyaki Chicken

COMMENTS:
I found this recipe (via Pinterest) from #Gimmesomeoven

INGREDIENTS:
2 lbs. boneless, skinless chicken breasts
2 cloves garlic, minced
1/2 cup chopped onion
1/2 cup honey
1/2 cup soy sauce (I use Bragg's)
1/4 cup rice wine vinegar
1 teaspoon ginger
1/8 teaspoon black pepper

DIRECTIONS:
Combine all ingredients in your slow cooker, cooking 4-6 hours (depending on your appliance) until chicken shreds easily.
If you would like to add to or thicken the remaining sauce, whisk together 1/4 cup cold water with 3 tablespoons of cornstarch. Add this to the remaining sauce in a small saucepan. Allow it to boil 1-2 minutes and pour over the chicken.
We served this with rice and sprinkled the top with sesame seeds. Yum!

To freeze, just combine all ingredients in a freezer bag before cooking. When ready to serve, dump contents of bag in your slow cooker and you are good to go!

Enchilada Tacos

COMMENTS:
Super easy freezer/crockpot meal that is great with chips, taco shells, or tortillas.

INGREDIENTS:
2 lbs. boneless, skinless chicken breast
1 (10oz) can enchilada sauce
1 can diced chilies

DIRECTIONS:
Combine above ingredients in freezer bag. On serving day, dump in crockpot. Allow to cook for 4-6 hours (depending on crockpot) and shred meat. Serve with chips, taco shells, or tortillas. Also, enchilada sour cream is great with this too:

8oz. sour cream
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon paprika

Simple Chicken

COMMENTS:
Another super simple, yet fabulous, chicken dish. This one from momdot.

INGREDIENTS:
chicken breasts
Mayonnaise (she cautioned to only use the real stuff - like Hellman's)
1/2 cup Parmesan cheese
salt and pepper to taste
1 teaspoon minced garlic

DIRECTIONS:
Coat chicken breasts in the mayo mixed with the remaining ingredients.
Bake for 45 minutes at 375*.

Caesar Chicken

COMMENTS: 
From the Frugal Girls, this was super easy and my family raved about it!

INGREDIENTS:
Chicken breasts (boneless, skinless)
Caesar dressing (they suggested, and I used Girard's)
Freshly shredded Parmesan Cheese

DIRECTIONS:
Pour dressing over chicken in crockpot. Sprinkle with cheese. Cook 4-6 hours, or until done. Yep, it's that simple!

Chicken Parmesan Casserole

COMMENTS: Another Pinterest find. Use canned chicken to make it even quicker/easier!
Ingredients
  • 3 chicken breasts, cooked and cubed OR 1 package of Costco's Grilled Chicken Breast Strips cut into cubes (this is what I used)
  • 1 pound pasta, cooked al dente
  • 1 jar of your favorite spaghetti sauce, 24 oz.
  • 2 cups mozzarella, shredded
  • ½ cup parmesan, shredded
  • 2 cups panko
  • 2 tablespoons olive oil
  • Salt & pepper
Instructions
  1. Preheat oven to 350 degrees.
  2. Place your cooked pasta into a 9x13 baking dish. Drizzle olive oil over pasta.
  3. Lay your cubed chicken on top of the pasta.
  4. Sprinkle ¼ cup of panko crumbs over chicken.
  5. Pour spaghetti sauce over pasta.
  6. Top with mozzarella, panko, and parmesan.
  7. Cover with aluminum foil and bake for 25 minutes
  8. Uncover for the last five minutes.

Buttermilk Ranch Chicken and Potatoes

COMMENTS: 
From South Your Mouth on Pinterest, I found this gorgeous and delicious dinner. 

INGREDIENTS: 
10 pieces bone-in, skin-on chicken thighs and/or legs
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon white pepper
1/2 teaspoon black pepper
3 pounds small red potatoes
1 1/2 cups buttermilk ranch dressing (like Newman's Own)

DIRECTIONS:

Add chicken, olive oil, salt, garlic, onion powder and peppers to a large bowl and toss to coat. 

Arrange chicken pieces evenly in greased pan and bake at 325 degrees for 45 minutes.

Meanwhile, clean potatoes. Leave the smaller potatoes whole and cut the larger ones in half. You don’t want anything bigger than 2” in diameter. After the 45 minutes, place potatoes in pan with chicken. Bake for 30 minutes.

Then baste chicken and potatoes with buttermilk ranch dressing and sprinkle potatoes with a little coarse grain salt. Bake 30 more minutes.

Baste chicken and potatoes again and bake for 20-30 more minutes, this time at 375*.


    ~2 hours and 15 minutes total cook time~

Garlic Parmesan Chicken

COMMENTS:
Super easy, super delicious! I halved the sauce ingredients from the original recipe without a problem. (I did not use fresh Parmesan cheese - it would probably be even better using the fresh.) So the way I made the recipe is as follows:

INGREDIENTS:
4 boneless skinless chicken breasts
1 stick of butter, softened
1/2 cup Mayonnaise
1/2 cup Parmesan cheese
6 minced garlic cloves
1/4 teaspoon oregano
1/4 teaspoon basil

DIRECTIONS:
Cook chicken in crockpot for 3 hours; drain.
Mix together remaining ingredients and pour over the chicken 30 minutes before serving.
Allow to cook for those additional 30 minutes and enjoy!

Taco Chicken Bowls

COMMENTS:
This recipe, found at BestFoodBook was much soup-ier than I imagined. But it was still delicious! (I did adapt it a bit to tame down the spiciness.)

INGREDIENTS:
1 1/2 pounds chicken breasts
16 oz. jar salsa
1 can black beans, drained and rinsed
8 oz. frozen corn
1 Tablespoon chili powder
1 teaspoon cumin
2 teaspoons minced garlic
1/2 teaspoon oregano
1/4 teaspoon salt
2 cups dry rice
8 oz. shredded cheddar

DIRECTIONS:
Add everything except the rice and cheese to the slow cooker. Stir well and cook on low for 8 hours.
Near the end of the cooking time, cook the rice according to its directions.
Serve the chicken mixture over the rice and topped with cheese.

Sweet & Spicy Chinese Chicken

COMMENTS:
The Peaceful Mom, one of the few blogs I follow, posted this recipe which we really enjoyed - especially since it's a crockpot recipe! Serve over rice with stir-fry veggies!

INGREDIENTS:
3 boneless skinless chicken breasts
3 boneless skinless chicken thighs
1 large bell pepper, diced
2 cloves garlic, minced
1 jar apricot or peach preserves
2 Tablespoons brown mustard
2 teaspoons salt
2 Tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ginger

DIRECTIONS:
Place chicken breasts on the bottom of the slow cooker, topped with the thighs.
Mix remaining ingredients together in a small bowl; pour over chicken.
OR prepare all in a Ziploc bag to freeze and serve later.
Cook on low for 5-6 hours.

Asian Sesame Chicken Wings

COMMENTS:
Another Pinterest find. The flavor is great so it could probably go on anything. The secret to this recipe is how the wings get crispy.

INGREDIENTS:
3 pounds of chicken wings, discarding wing tips
2 Tablespoons baking powder
1/2 teaspoon sea salt

1/2 cup liquid amino acids
1 teaspoon ground ginger
1 Tablespoon balsamic vinegar
3 cloves garlic, minced
2 green onions, chopped
1/2 teaspoon red pepper flakes
sesame seeds for serving

DIRECTIONS:
Preheat oven to 250 degrees.
Combine baking powder and salt in a Ziploc bag.
Pat wings dry with a paper towel and toss in Ziploc until evenly coated.
Place on a wire rack in a single layer and bake for 30 minutes on the lower-middle oven rack.
Meanwhile, combine sauce ingredients in a small bowl.
Then move wings to upper rack and turn heat up to 425 degrees. Bake for 45 more minutes.
Remove from oven and toss with sauce. Let sit a few minutes and toss again. Top with sesame seeds for serving.

Chicken Cordon Bleu Casserole

COMMENTS:
Another great find on Pinterest. Check out the original post here for some awesome food photography! (The only adaptations I made were to accommodate what I had on hand and to limit the topping just a bit.)

INGREDIENTS:
3 chicken breasts, cooked and shredded
1/2 pound thinly sliced honey ham
1/4 pound sliced baby Swiss cheese
SAUCE:
4 Tablespoons butter
4 Tablespoons flour
3 1/4 cups milk
2 Tablespoons lemon juice
1 Tablespoon mustard
3/4 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon white pepper
TOPPING:
4 Tablespoons butter
1 cup breadcrumbs
3/4 teaspoon seasoned salt

DIRECTIONS:
Put cooked shredded chicken on the bottom of a greased baking dish. Rough chop the ham and scatter it over the top of the chicken. Lay the Swiss cheese on top of the ham.

Melt 4T butter in saucepan over medium heat. Stir in the flour until smooth and bubbly. Then slowly pour in the milk while stirring briskly. Cook over medium heat, stirring constantly until the sauce thickens. Stir in the lemon juice, mustard, salt, paprika and white pepper. Bring sauce just back to a low boil and turn off heat. Pour sauce evenly over entire casserole.

Melt 4T butter in the microwave in a medium sized bowl. Stir in the bread crumbs and seasoning salt. Sprinkle over the top of the casserole.

Bake at 350* casserole uncovered for 45 minutes until hot and bubbly throughout and topping has turned a light golden brown. Remove from oven and allow to cool for 5-10 minutes prior to serving.

White Chicken Chili Soup

COMMENTS:
I found this recipe on Pinterest from a blog called Flourish. I adapted it slightly for what I had on hand and since most of my family prefers more mild flavors. I also made it with more chicken broth, making it more of a soup than a chili. I thought the flavor was phenomenal; my husband thought it could have used more spice... so add more/less cumin as you desire.

INGREDIENTS:
1 Tablespoon olive oil
1 onion, chopped
1 bell pepper, chopped
3 chicken breasts, cooked and shredded
2 cans chicken broth
1 can white beans
1 can kidney beans
1 can corn
1 can green chilies
2 teaspoons minced garlic
1 1/2 teaspoons cumin
1 1/2 teaspoons salt
1 teaspoon pepper

DIRECTIONS:
Sauté onion and bell pepper in oil. Once tender add to remaining ingredients in crockpot, cooking on low for 4-6 hours.

Fancy Pants Chicken

COMMENTS:
I saw this recipe floating around on FB, adapted it a bit to be GF and MSG-free, and now we have a new favorite meal!

INGREDIENTS:
4 chicken breasts
4-5 slices of bacon
bag of fresh spinach
8 oz package of fresh sliced mushrooms
2 T. chicken broth base (like bullion granules but MSG free)
sprinkle of Kosher salt
sprinkle of pepper
sprinkle of onion powder
sprinkle of garlic powder
1/2 teaspoon parsley
1/2 teaspoon thyme
1/2 teaspoon sugar
1/4 cup white wine
2 Tablespoon olive oil
4 oz. shredded Mozzarella

DIRECTIONS:
Preheat oven to 375 degrees.
Place chicken in greased 9x13" pan. Sprinkle with salt and pepper and cover with bacon.
Top with spinach and then mushrooms.
Whisk together remaining ingredients (except cheese) and pour over everything.
Bake for 30-45 minutes (or until chicken is no longer pink), loosely covered.
Top with cheese and bake 5 more minutes.

Chicken Parmesan in the Crockpot

COMMENTS:
A new crockpot recipe was tried and all four of us agreed that it was delicious! We made some spaghetti to serve with it. YUM!

INGREDIENTS:
boneless, skinless, chicken breasts
1/3 cup bread crumbs
1/3 cup Parmesan cheese
1 teaspoon Italian seasoning (or some sprinkles of basil, oregano, and garlic powder)
1/4 teaspoon black pepper
1/4 teaspoon Kosher salt
1 Tablespoon olive oil
1 egg, beaten
sliced Mozzarella cheese
Marinara sauce

DIRECTIONS:
Drizzle olive oil on bottom of crockpot.
Mix together bread crumbs, spices, and Parmesan cheese.
Dip chicken in egg and then in the bread crumb mixture; place in crockpot.
Place a layer of cheese on top of chicken.
Cover with sauce.
Serve over pasta.

Italian Meatballs

COMMENTS:
This recipes originally called for ground chicken or pork. I ended up using ground turkey because that is what I had on hand. They were delicious!

INGREDIENTS:
2 pounds ground chicken, turkey, or pork
1 medium onion minced
3 cloves garlic, minced
1/2 cup oats
2 eggs
1/2 cup Parmesan cheese
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon salt
1/2 teaspoon pepper

DIRECTIONS:
Blend all ingredients together well. Use a 3T scoop to make balls.
Bake at 425 degrees for 20-25 minutes.
(These can just be baked on a cookie sheet or stoneware because the grease content is so low.)
These meatballs also freeze well.

Salted Chicken

COMMENTS:
For variety, I searched for something a little different than our Rotisserie Chicken. I found this one on allrecipes and simplified it. It was delicious and made for great lunch meat!

INGREDIENTS:
1 whole chicken
3 tablespoons kosher salt

DIRECTIONS:
Preheat the oven to 450 degrees.
Dry the outside of the chicken with paper towels and liberally salt inside the cavity and over the back and sides.
Bake for approximately 1 hour, or until the inside reaches 160 degrees.

Bourbon Street Chicken

COMMENTS:
I found this recipe at onceamonthmeals.com but adapted it to be simpler and to be a crockpot meal).

INGREDIENTS:
2 pounds chicken breasts
1 teaspoon garlic
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/3 cup brown sugar
2 Tablespoons ketchup
1 Tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce

DIRECTIONS:
Combine all ingredients in freezer bag.
On cooking day, dump in crockpot and enjoy 4-6 hours later.
Serve over rice or mashed potatoes.

Honey Sesame Chicken

I made this as a freezer meal last month and finally got around to making it for dinner. It was DELICIOUS! It tasted like real Chinese take out. YUM!!! I will have to double this recipe next time!

INGREDIENTS:
1 pound chicken tenders
3 Tablespoons olive oil
3/4 cup honey
2 Tablespoons sesame seeds
1/2 cup soy sauce
1 Tablespoon sesame oil
1 teaspoon salt
1 teaspoon pepper
1 package frozen broccoli

DIRECTIONS:
Place all ingredients in freezer bag, toss to coat and freeze. When ready, place in crockpot and cook for 4-6 hours.
Serve over hot cooked rice.
