Slow Cooker Teriyaki Chicken

COMMENTS:
I found this recipe (via Pinterest) from #Gimmesomeoven

INGREDIENTS:
2 lbs. boneless, skinless chicken breasts
2 cloves garlic, minced
1/2 cup chopped onion
1/2 cup honey
1/2 cup soy sauce (I use Bragg's)
1/4 cup rice wine vinegar
1 teaspoon ginger
1/8 teaspoon black pepper

DIRECTIONS:
Combine all ingredients in your slow cooker, cooking 4-6 hours (depending on your appliance) until chicken shreds easily.
If you would like to add to or thicken the remaining sauce, whisk together 1/4 cup cold water with 3 tablespoons of cornstarch. Add this to the remaining sauce in a small saucepan. Allow it to boil 1-2 minutes and pour over the chicken.
We served this with rice and sprinkled the top with sesame seeds. Yum!

To freeze, just combine all ingredients in a freezer bag before cooking. When ready to serve, dump contents of bag in your slow cooker and you are good to go!

Enchilada Tacos

COMMENTS:
Super easy freezer/crockpot meal that is great with chips, taco shells, or tortillas.

INGREDIENTS:
2 lbs. boneless, skinless chicken breast
1 (10oz) can enchilada sauce
1 can diced chilies

DIRECTIONS:
Combine above ingredients in freezer bag. On serving day, dump in crockpot. Allow to cook for 4-6 hours (depending on crockpot) and shred meat. Serve with chips, taco shells, or tortillas. Also, enchilada sour cream is great with this too:

8oz. sour cream
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon paprika

Shredded Salsa Beef

COMMENTS:
I found this recipe in a freezer-meal cookbook. I barely changed the recipe and it was super yummy! We put it on tortilla chips with sour cream, shredded cheese, lettuce, and guacamole. It is supposed to freeze well but we enjoyed it as leftovers the next day instead of freezing. Maybe next time I'll make a bigger batch!

INGREDIENTS:
1 1/2 - 2 lbs. beef roast (chuck or round)
1 cup chopped onion
1 small can chopped green chilies
1 cup salsa
2 Tablespoons brown sugar
1 Tablespoon soy sauce
2 teaspoons minced garlic

DIRECTIONS:
Combine all ingredients in crockpot and cook on low for 6 hours.
To freeze, just combine all ingredients in a freezer bag before cooking.

Sweet & Spicy Chinese Chicken

COMMENTS:
The Peaceful Mom, one of the few blogs I follow, posted this recipe which we really enjoyed - especially since it's a crockpot recipe! Serve over rice with stir-fry veggies!

INGREDIENTS:
3 boneless skinless chicken breasts
3 boneless skinless chicken thighs
1 large bell pepper, diced
2 cloves garlic, minced
1 jar apricot or peach preserves
2 Tablespoons brown mustard
2 teaspoons salt
2 Tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ginger

DIRECTIONS:
Place chicken breasts on the bottom of the slow cooker, topped with the thighs.
Mix remaining ingredients together in a small bowl; pour over chicken.
OR prepare all in a Ziploc bag to freeze and serve later.
Cook on low for 5-6 hours.

White Chicken Chili Soup

COMMENTS:
I found this recipe on Pinterest from a blog called Flourish. I adapted it slightly for what I had on hand and since most of my family prefers more mild flavors. I also made it with more chicken broth, making it more of a soup than a chili. I thought the flavor was phenomenal; my husband thought it could have used more spice... so add more/less cumin as you desire.

INGREDIENTS:
1 Tablespoon olive oil
1 onion, chopped
1 bell pepper, chopped
3 chicken breasts, cooked and shredded
2 cans chicken broth
1 can white beans
1 can kidney beans
1 can corn
1 can green chilies
2 teaspoons minced garlic
1 1/2 teaspoons cumin
1 1/2 teaspoons salt
1 teaspoon pepper

DIRECTIONS:
Sauté onion and bell pepper in oil. Once tender add to remaining ingredients in crockpot, cooking on low for 4-6 hours.

BBQ Spareribs

COMMENTS:
Country-style pork ribs were on sale this week (buy one package, get one free!!!) so I tried out this crockpot recipe. I have already been asked when we can have them again!

INGREDIENTS:
2 pounds country-style ribs
1 1/2 cups ketchup
1 1/2 teaspoon seasoned salt
1/2 teaspoon liquid smoke
3/4 cup brown sugar
1/2 cup white vinegar
1 teaspoon ground mustard

DIRECTIONS:
In crockpot, combine all ingredients, except pork. Stir well and then add pork, smothering it with the sauce. Allow to cook all afternoon for a great dinner!

Beef Pot Roast

COMMENTS:
"Mom, This is the BEST roast you have EVER made!"

INGREDIENTS:
sliced mushrooms
chopped green pepper
1/4 cup plus 2 Tablespoons ketchup
1 Tablespoon Worcestershire sauce
1/2 teaspoon pepper
1/4 teaspoon salt
2 pounds shoulder pot roast

DIRECTIONS:
Place all ingredients in freezer bag. Cook all day/afternoon in the crockpot.

Thai Pork

COMMENTS:
"Mom, will you make this again?" That's enough of a review for me!


INGREDIENTS:
2 red bell peppers, sliced
2 pounds pork tenderloin or pork chops
1/2 cup teriyaki sacue
2 Tablespoons rice vinegar
1 teaspoon crushed red pepper flakes
2 cloves garlic

Serve with:
1/2 cup peanut butter
peanuts

DIRECTIONS:
Mix all ingredients in freezer bag. Cook in crockpot for 4-6 hours (depending on crockpot). Ten minutes before serving you can whisk peanut butter into sauce or you can just add peanut butter to each serving, along with peanuts.

Hawaiian Sliders

COMMENTS:
Here is a different take on burgers on the grill. And very yummy too! These can be made ahead of time and frozen between pieces of wax paper.

INGREDIENTS:
1 pound ground pork
1/4 cup green onions, chopped
1 teaspoon ginger
1/2 teaspoon pepper
2 Tablespoons Bragg's
pineapple slices

DIRECTIONS:
Mix together pork, onions, ginger, pepper, and Braggs; form into burgers.
Cook over the grill.
The last couple minutes, grill the pineapple slices and serve together.

Italian Meatballs

COMMENTS:
This recipes originally called for ground chicken or pork. I ended up using ground turkey because that is what I had on hand. They were delicious!

INGREDIENTS:
2 pounds ground chicken, turkey, or pork
1 medium onion minced
3 cloves garlic, minced
1/2 cup oats
2 eggs
1/2 cup Parmesan cheese
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon salt
1/2 teaspoon pepper

DIRECTIONS:
Blend all ingredients together well. Use a 3T scoop to make balls.
Bake at 425 degrees for 20-25 minutes.
(These can just be baked on a cookie sheet or stoneware because the grease content is so low.)
These meatballs also freeze well.

Bourbon Street Chicken

I found this recipe at onceamonthmeals.com but adapted it to be simpler and to be a crockpot meal).

INGREDIENTS:
2 pounds chicken breasts
1 teaspoon garlic
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/3 cup brown sugar
2 Tablespoons ketchup
1 Tablespoon apple cider vinegar
1/2 cup water
1/3 cup soy sauce

DIRECTIONS:
Combine all ingredients in freezer bag.
On cooking day, dump in crockpot and enjoy 4-6 hours later.
Serve over rice or mashed potatoes.

Honey Sesame Chicken

COMMENTS:
I made this as a freezer meal last month and finally got around to making it for dinner. It was DELICIOUS! It tasted like real Chinese take out. YUM!!! I will have to double this recipe next time!

INGREDIENTS:
1 pound chicken tenders
3 Tablespoons olive oil
3/4 cup honey
2 Tablespoons sesame seeds
1/2 cup soy sauce
1 Tablespoon sesame oil
1 teaspoon salt
1 teaspoon pepper
1 package frozen broccoli

DIRECTIONS:
Place all ingredients in freezer bag, toss to coat and freeze. When ready, place in crockpot and cook for 4-6 hours.
Serve over hot cooked rice.

Chicken Fiesta Soup

COMMENTS:
A great freezer meal for a fall/winter evening.

INGREDIENTS:
4 cups chicken cooked and shredded
15.25 ounces corn
3.75 cups enchilada sauce
8 ounces chopped green chiles
14.5 ounces canned diced tomatoes drained
14.5 ounces chicken broth
1 cup yellow onion chopped
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 teaspoon black pepper
Additional desired toppings such as corn chips sour cream and dairy free cheese.

DIRECTIONS:
Combine all ingredients and place in a slow cooker. Cover and cook on low for 6-8 hours. Serve with corn chips, dairy free sour cream and dairy free cheese (if desired).
Freezing Directions:
Place chicken in a gallon size freezer bag. Combine remaining ingredients and place in freezer bag. Ensure bag is evenly mixed. Remove as much air as possible, label & seal. TO SERVE: Thaw. Place in a slow cooker. Cover and cook on low for 6-8 hours. Serve with corn chips, dairy free sour cream and dairy free cheese (if desired).

Honey Lime Chicken

COMMENTS:
I found this recipe in my quest for more freezer meals. Onceamonthmeals.com is a great resource.

INGREDIENTS:
1/4 cup olive oil
2 limes juiced and zested
2 Tablespoons honey
1/2 teaspoon cayenne pepper (double check that it is Gluten Free)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds chicken boneless skinless breasts
DIRECTIONS:
Combine all ingredients and place in a gallon size freezer bag. Shake to mix well. Refrigerate overnight. Heat grill to medium heat. (You could also use a skillet on the stove top). Cook chicken for 6-7 minutes, then turn and cook the other side for 6-7 minutes. Time will vary depending on size/ thickness of chicken.

Mongolian Beef

COMMENTS:
This was another hit from freezer to crockpot!

INGREDIENTS:
2 pounds sirloin steak, cut into stir-fry strips
1/2 teaspoon ginger
2 cloves garlic, minced
3/4 cup soy sauce
3/4 cup water
3/4 cup brown sugar
1/4 cup cornstarch
1/2 cup sliced or shredded carrots
3 green onions, chopped

DIRECTIONS:
Coat steak pieces in cornstarch.
Add remaining ingredients to freezer bag and mix well.
To prepare, dump freezer bag contents into crockpot and allow to cook for 3-5 hours (depending on your crockpot; you be the judge).
Serve over rice.

Hoisin Ginger Beef

COMMENTS:
A great freezer meal! This is one I threw in the crockpot for the family to have while I was gone. They texted me saying it was a good thing I wasn't there because they didn't save me any. And, will I make it again?

INGREDIENTS:
2 pounds sirloin steak
1/2 cup hoisin sauce
2 Tablespoons lime juice
1 Tablespoon honey
1 clove garlic
1 teaspoon salt
1 teaspoon ginger
1 teaspoon sesame oil
2 drops tabasco sauce

Serve with: rice, sesame seeds, and green onion

DIRECTIONS:
Place all ingredients (except rice, sesame seeds, and green onion) in freezer bag and freeze.
Thaw the night before in refrigerator (if you remember) and cook in crockpot for 4-8 hours (this depends on the kinds of crockpot you have).
Serve over hot cooked rice and garnish with sesame seeds and chopped green onion.

Pioneer Woman's Perfect Pot Roast

I found this recipe through a few links on Pinterest for freezer meals. DELICIOUS!

INGREDIENTS:
3-5 lb. chuck roast
3 tablespoons olive oil
2 whole onions, peeled and halved
carrots
potatoes
1 teaspoon thyme
1 cup red wine
3 cups beef broth

DIRECTIONS:
Place roast in freezer bag along with oil, onions, carrots, potatoes, and thyme.
Mark on freezer bag to add red wine and chicken broth to the crockpot.
Cook on for 4-6 hours.

Thai Chicken with Peanut Sauce

This was great! I used chicken legs but wings would work well too.

INGREDIENTS:
2 pounds chicken drumsticks or wings
1 cup salsa
1/4 cup peanut butter
3 Tablespoons lime juice
3 Tablespoons soy sauce
3 Tablespoons water
1 teaspoon ginger
1/4 cup sugar
2 cloves garlic, chopped

DIRECTIONS:
Place all ingredients in a freezer bag. Freeze until ready to cook. Thaw slightly and dump in slow cooker for 6-8 hours on low.

Teriyaki Chicken (Freezer)

COMMENTS:
I found this recipe through plantoeat.com and enjoyed the simplicity and taste. Obviously, if you are going to take advantage of how well it freezes, double or triple (or quadruple) the recipe.

INGREDIENTS:
chicken thighs on the bone (skin removed)
1/3 cup soy sauce
1/3 cup brown sugar
1 teaspoon oil
1 teaspoon minced garlic
1 teaspoon minced ginger

DIRECTIONS:
Combine all ingredients except chicken until sugar is dissolved. Add chicken to marinade and freeze.
Thaw chicken overnight in refrigerator before baking for one hour at 350 degrees.
Turn chicken during baking.

Garlic Honey Chicken Kabobs

COMMENTS:
I found the recipe for this marinade through Pinterest (original recipe here). It was quick to prepare when doing other freezer cooking and was a hit on the grill weeks later!

INGREDIENTS:
1/4 cup oil
1/3 cup soy sauce (I used Bragg's to be GF)
1/3 cup honey
1/4 teaspoon pepper
2 teaspoons minced garlic
chicken, cubed
red onion and other veggies, chunked

DIRECTIONS:
Mix all ingredients (except onion) together and allow to marinade several hours or overnight. Or freeze chicken in marinade and grill later.
Prepare kabobs for grilling by draining marinade and skewering the chicken and veggies. Grill for about 15 minutes on medium-high heat, making sure chicken is completely cooked.
