Banana Pancakes

COMMENTS:
We had some bananas that needed to be used... banana pancakes were the solution!

INGREDIENTS:
1 cup flour
1 Tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
2 Tablespoons oil
1 cup milk
2 bananas, mashed

DIRECTIONS:
Combine flour sugar, baking powder, and salt.
In separate bowl beat together egg, oil, milk, and bananas.
Combine two mixtures and drop 1/4 cup fulls of batter over heated griddle.

SPECIAL NOTE:
If I have labeled a recipe as GlutenFree or Dairy Free but it appears to have those ingredients in it... that means the recipe is still delicious with substitutes/replacements. Ex: soy milk, lactose-free cheese, Bragg's liquid aminos (for soy sauce), all-purpose gluten free flour (Better Batter is my favorite), etc. Please check your individual ingredients to be sure they are GF or DF, if that is what you need.

Mini German Pancakes

COMMENTS:
I saw this on Pinterest and mine actually looked like the pin! (even, gluten free!) Plus, it was very good. We topped with cherry pie filling one time. Another time peanut butter and syrup.

INGREDIENTS:
1 1/2 cups milk
9 eggs
1 1/2 cups flour
3/4 tsp. salt
1 1/2 tsp. vanilla extract
6 tablespoons butter melted

DIRECTIONS:
Preheat oven to 400 degrees F. Blend first five ingredients (milk thru vanilla) in a blender. Be careful to see that any flour clumps get well-blended.
Blend in butter a little at a time in order to temper the eggs.
Grease muffin tins well and distribute batter evenly between 15 (or so) tins. Bake for 15 minutes, or until puffy and golden on top. When taking them out of the muffin pan, flip them upside down. That is where the hole is (?).
Serve with your favorite toppings. (Mine was a dusting of powdered sugar and cherry pie filling.)

GF Pancakes

COMMENTS:
I have been using this as our primary pancake mix for quite a while but it somehow never made it here. I mix up the dry ingredients in advance so that when it comes time to make pancakes, it is much quicker. The amount I have on here will feed our family of four plus some.


INGREDIENTS:
1 cup sorghum flour
1 cup brown rice flour
1/4 cup psyllium husks
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups milk
2 Tablespoons honey, agave nectar, or syrup
4 teaspoons grapeseed oil
2 teaspoons vanilla extract

DIRECTIONS:
Whisk together dry ingredients.
Add remaining ingredients; whisk until smooth.
On heated skillet, melt a bit of butter to prevent sticking. Pour about 1/4 cup of batter for each pancake. Cook 1-2 minutes per side and enjoy!

Fluffy Pancakes

COMMENTS:
My daughter found this recipe at allrecipes.com and made it for her friends the other day. Apparently they were very yummy because the double batch she made disappeared quickly! :)

INGREDIENTS:
3/4 cup milk
2 Tablespoons white vinegar
1 cup flour
2 Tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted

INGREDIENTS:
Combine milk with vinegar and set aside for five minutes to "sour."
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
Whisk egg and butter into "soured" milk.
Pour the flour mixture into wet ingredients and whisk until lumps are gone.
Heat a large skillet and coat with cooking spray.
Pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Banana Chip Pancakes

COMMENTS:
What a tasty treat! Spread some peanut butter on and top with syrup! From my daughter: "It tastes like a banana split!"

INGREDIENTS:
2 cups dry pancake mix
1 egg
1 cup milk
1 cup mashed ripe bananas
3/4 cup mini chocolate chips

DIRECTIONS:
Combine egg, milk, and bananas. Stir into pancake mix just until moistened.
Stir in chips.
Scoop batter onto hot greased griddle. Flip when bubbles form on top. Cook until second side is golden brown.
Enjoy!

Pancake Mix

COMMENTS:
I was getting ready to make pancakes when my parents were visiting and realized we were almost out of pancake mix! Oops! So allrecipes.com to the rescue! What was fun was that everyone got to have the store bought mix pancakes AND the homemade version at breakfast that morning. Everyone said the homemade version was much tastier! Note: If you want to double this recipe, still only use one egg. (This recipe makes approximately 9 average-size pancakes.)
A few other things I learned when searching for how to make pancakes from scratch: Resting the batter in the refrigerator for 15-20 minutes will cause the pancakes to be fluffier. Make the batter ahead of time and be ready to make pancakes anytime! Also, stirring the batter between batches pops the air bubbles that are forming, causing deflated pancakes.

INGREDIENTS:
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1 egg
2 tablespoons oil
1/2 teaspoon vanilla

DIRECTIONS:
Preheat griddle over medium-high heat. Spray with non-stick spray.
Combine dry ingredients.
In a separate bowl, beat together egg, milk, oil, and vanilla.
Pour milk mixture into dry mixture; beating until smooth.
Scoop batter onto hot griddle. Brown on both sides.

Apple Pancakes

COMMENTS:
These are super yummy in the fall - especially when they are hot off the griddle! If you allow the batter to sit for 30-60 minutes before adding the apples the cinnamon flavor is much more pronounced! (But that's not necessary for a delicious meal.)

INGREDIENTS:
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
2 cups sour cream (or plain yogurt)
1/4 cup apple cider (or juice)
1/4 cup sugar
1/4 cup margarine, melted
2 eggs
2 medium apples, peeled and finely chopped

DIRECTIONS:
Stir together flour, baking powder, baking soda, and cinnamon in a large mixing bowl. Add sour cream, apple cider, sugar, butter, and eggs. Beat until smooth. The batter will be very thick.
Stir apples into batter.
Heat a heavy skillet and grease with oil. Drop batter onto hot griddle, about 1/4 cup at a time.
When bubbles appear on top after approximately 2 minutes, turn and brown other side.

Apple Puff Pancake

COMMENTS:
This is an easier, yummier, and prettier (healthier too!) apple pancake than my previous apple pancake recipe. It really puffs up - it's gorgeous! The pictures show the recipe made in a 9x13 and also in individual serving dishes. (Halving the recipe makes three individual puff pancakes.)

INGREDIENTS:
6 eggs
1 1/2 cups milk
1 teaspoon vanilla extract
1 cup flour
3 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 tablespoons butter
3 apples, peeled, cored, sliced
3 tablespoons brown sugar

DIRECTIONS:
Preheat the oven to 425 degrees.
In a large mixing bowl, blend eggs, milk and vanilla. Add flour, sugar, salt, and cinnamon. Mix just until blended.
Melt butter in a 9x9 inch square pan. Arrange apple slices in the bottom of the pan and pour the batter over them. Sprinkle top with brown sugar.
Bake for 30 minutes or until puffed and lightly browned.

Sweet Veggie Pancakes

COMMENTS:
This is another recipe from Jessica Seinfeld's cookbook: Deceptively Delicious: Very yummy!

INGREDIENTS:
1 cup water
1/2 cup pureed sweet potatoes
1/4 teaspoon cinnamon
1 cup pancake mix

DIRECTIONS:
In a large bowl, mix the water, sweet potato puree, and cinnamon.
Coat a griddle with cooking spray and set it over medium-high heat.
When the pan is hot, spoon the batter onto the griddle, using 1/4 cup batter for each pancake.
Cook until bubbles form on top of the pancakes and the batter is set, 2-3 minutes.
Then use a spatula to flip the pancakes and cook them until golden brown on the other side, 2-3 minutes.

Apple Pancake

COMMENTS:
This is a new favorite among the kids!

INGREDIENTS:
4 eggs
1 cup flour
1 cup milk
5 tablespoons butter
Peeled, thinly sliced apples (1-2 apples)
Cinnamon-Sugar

DIRECTIONS:
Preheat the oven to 425 degrees.
Beat eggs until they are foamy, then add the flour and milk; blend well.
Melt butter in a casserole dish and then place sliced apples on top. Sprinkle with cinnamon-sugar and then pour egg mixture on top.
Bake for 15-20 minutes. Sprinkle with cinnamon-sugar before serving.
