INGREDIENTS:
2 T melted coconut oil
1/4 cup sugar
1 banana, mashed
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1/4 cup flaxseed meal
1/2 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/4 cup oats
1 T chia seeds
1/2 cup blueberries (fresh or frozen)
1/4 cup mini chocolate chips
DIRECTIONS:
Preheat the oven to 350 degrees.
Mix together coconut oil, sugar, banana, and extracts until creamy.
Next add flaxseed, almond flour, baking soda, cinnamon, and salt. A thick dough will form.
Now add the oats and chia seeds.
Finally, add the blueberries and chocolate chips.
Use a large cookie dough scoop and pack dough tightly before scooping dough onto stoneware. (The creator of this recipe used parchment paper on a baking sheet.) You may want to press down on the tops a bit before baking.
Bake for about 14 minutes until edges become slightly brown.
Allow cookies to cool for at least 15 minutes before removing from pan (or else they will fall apart).

Hashbrown Breakfast Pizza

I made this for dinner one night and it was delicious! It will become a new regular at our house, I believe. I found the original recipe at The Gunny Sack but here is what I did (not much different):
INGREDIENTS:
frozen hash browns (I honestly don't know how much - I just filled the bottom of a stoneware jellyroll pan. The original recipe said one bag, but didn't specify the bag size.)
3 tablespoons melted butter
salt and pepper to taste
3 eggs
1/3 cup chopped onion
chopped bell peppers (I used six mini sweet peppers)
sausage, cooked and chopped (I used one box of frozen sausage)
2 cups shredded Cheddar cheese
DIRECTIONS:
Preheat oven to 425 degrees. Spread hash browns on the bottom of a pan (I used a stoneware jellyroll pan). Drizzle with melted butter and sprinkle with salt and pepper to taste. Bake for 20-25 minutes.
Meanwhile, scramble eggs.
Top hash browns with onion, scrambled eggs, sausage, and peppers. Top all with shredded cheese. Bake for an additional 20-25 minutes.

Banana Boat Breakfast

I saw an idea to make a quick breakfast (or snack) using tortillas, a spread, and a fruit. Here is what we came up with for a delicious speedy breakfast. And it tasted like banana boats from the campfire!
INGREDIENTS:
tortillas
peanut butter
bananas, sliced
mini chocolate chips
DIRECTIONS:
Spread tortillas with peanut butter. Lay banana slices on top of one half of the tortilla. Sprinkle with a few mini chocolate chips (1 t?). Fold tortilla in half. Heat in skillet to warm.

However, I have not tried freezing them (I'm kind of leery about how they'll turn out from the freezer even though the site says they are good) and I only halved the recipe in a casserole dish (I have an aversion to washing the muffin pan).

My daughter has experimented with different biscuit recipes to find a good GF biscuit that we all enjoy. I am turning the blog over to her to share what she has done:
INGREDIENTS:

8 tablespoons butter, cubed
3/4 cup milk
DIRECTIONS:
Preheat oven to 425* F.
Mix flour, sugar, salt, baking powder, and salt.
Cut butter into flour mixture.
Make a well and add the milk.
Mix with fingers and milk when necessary.
Roll out dough on a lightly floured surface.
Cut biscuits with a biscuit cutter. (We use a glass cup)
Bake for 12 minutes or until golden brown. (Our biscuits normally don't brown. I did try it once, but they were dry and crumbly. This was with GF flour.)

My daughter found this recipe on Pinterest and asked me to make it for some variety with my breakfast bakes. It was great but I think it would be a better dessert than breakfast. My daughter called it "breakfast in heaven." Amanda (the recipe creator) wasn't kidding when she said it tastes like cookie dough! This recipe makes only one serving in a ramekin - I just tripled it and baked it in three separate dishes.
INGREDIENTS:
1 Tablespoon peanut butter (or any kind of nut butter)
1/4 cup applesauce
2 teaspoons agave (or honey)
1/4 teaspoon baking powder
pinch of salt
1/4 cup oats
2 Tablespoons almond flour
1 Tablespoon chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees and grease small oven-safe dish(es).
In a small bowl, combine peanut butter, applesauce, agave, vanilla, baking powder, and salt; mix well. Add oats and almond flour, stirring until you have a sticky dough. Add in chocolate chips.
Spread "dough" in dishes and bake for about 20 minutes.

Overnight Oatmeal Bake

I'm always in search of new oatmeal bake recipes. I found this one on allrecipes and barely adapted it. I didn't have any raisins but they didn't seem needed. This one was a hit for the kids because of the "carmelized" top and it was a hit for me because I could make it the night before and just stick it in the oven in the morning. (Maybe I could do that with all of them?) However, this does not need to be made the night before. Just change the cooking time to 30 minutes if made right before baking.
INGREDIENTS:
1/3 cup vegetable oil
1/3 cup sugar
2 eggs
1 cup milk
1/2 teaspoon salt
1 Tablespoon baking powder
3 cups quick cooking oats
2 Tablespoons brown sugar
1/2 teaspoon cinnamon
DIRECTIONS:
Beat together oil and sugar. Add eggs and milk. Stir in salt, baking powder, and oats. (Stir in 1/2 cup raisins here, if desired.) Pour into a greased 9x13 pan. Sprinkle with brown sugar and cinnamon. Cover and refrigerate over night.
In the morning bake at 350 degrees for 35 minutes (or 30 minutes if made right before baking).

This is a more "adult" version of my other baked oatmeals. Super yummy and much more substantial.
INGREDIENTS:
2 cups oats
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup sliced almonds
1 cup berries (blueberries or raspberries)
1/3 cup mini chocolate chips
2 cups (soy) milk
1 large egg
3 tablespoons butter, melted
1 tablespoon vanilla
1 ripe banana, sliced
DIRECTIONS:
Preheat oven to 375 degrees and grease baking dish. (I used a deep 9x8.)
Melt butter in microwave. Meanwhile, mix together oats, sugar, baking powder, cinnamon, salt, half the almonds, half the berries, and half the chocolate chips. Spread this mixture in the baking dish.
Sprinkle the remaining nuts, berries, and chocolate, as well as the banana slices, on top.
Now whisk together the milk, egg, butter, and vanilla. Pour this mixture over everything. Gently shake the baking dish to make sure the milk mixture has gone through.
Bake 35-40 minutes or until the top is golden brown and the milk mixture has set.

Overnight Apple Cinnamon Oatmeal

I wanted something different to make with our plethora of apples. This recipe from theyummylife.com was a hit, sprinkled with brown sugar. Plus, waking up to a warm breakfast already prepared is great!
INGREDIENTS:
2 apples peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
1-1/2 cups milk
1-1/2 cups water
2 cups oats
3 tablespoons brown sugar
1/2 teaspoon cinnamon
2 tablespoons ground flax seed
1/4 teaspoon salt
DIRECTIONS:
Coat inside of slow cooker with cooking spray. Add all ingredients to slow cooker. Stir, cover, and cook on low for approx. 7 hours (slow cooker times can vary). Spoon oatmeal into bowls.

COMMENTS:
I saw this on Pinterest and mine actually looked like the pin! (even, gluten free!) Plus, it was very good. We topped with cherry pie filling one time. Another time peanut butter and syrup.
INGREDIENTS:
1 1/2 cups milk
9 eggs
1 1/2 cups flour
3/4 tsp. salt
1 1/2 tsp. vanilla extract
6 tablespoons butter melted
DIRECTIONS:

These were actually pretty good - and a very nice change of pace from our oatmeal bakes for breakfast.
INGREDIENTS:
4 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
Assorted mix-ins (such as shredded cheese, diced vegetables, and cooked and chopped bacon, ham or sausage)
DIRECTIONS:
Heat your oven to 350ยบ F and coat a 6-cup muffin pan with nonstick cooking spray.
Whisk together the eggs, half-and-half, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.
Add about 2 tablespoons of mix-ins to each cup.
Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 6 mini frittatas.

Banana Brownie Waffles

What a fun and easy treat for breakfast! The original recipe is here but I adapted it to be gluten free.
INGREDIENTS:
1 1/2 cups all-purpose gluten free flour
1/4 cup flax seed
1/2 cup cocoa powder
3 tablespoons sugar
1 tablespoon baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 3/4 cups milk
2 ripe bananas, mashed (about 1 cup)
2 large eggs, beaten
1/4 cup canola oil
1 teaspoon vanilla extract
DIRECTIONS:
Preheat waffle iron.
Whisk together the dry ingredients in one bowl.
In another bowl, whisk together the wet ingredients.
Blend the dry ingredients into the banana mixture, just until moistened.
Spray waffle iron with non-stick cooking spray and pour batter into waffle iron. Cook according to your waffle iron's directions.
Serve with sliced bananas.
